On the night I made this I had no idea what to make for dinner so I found the following items in my pantry and refrigerator and so Spaghetti Casserole was born...
What you need:
- 2 lbs. hamburger
- 1 medium onion (chopped)
- 1 clove garlic (minced)
- 2 c. shredded mozzarella cheese
- 1 c. shredded Parmesan cheese
- 24 oz. spaghetti sauce
- 6 oz. tomato paste
- 1 tbs. olive oil
- 1 c. water
- 2 c. macaroni or shells pasta
- Salt & pepper
What you do:
- Preheat oven to 350ยบ.
- Boil water and cook pasta according to instructions on the box. Drain and set aside.
- In a skillet on the stove top, heat olive oil and cook onions until soft and translucent. Add garlic and cook an additional 5 minutes.
- Add hamburger, salt & pepper and brown; drain grease.
- Add spaghetti sauce, tomato paste and water to fully cooked hamburger. Mix well over medium heat for about 5 minutes.
- Place a small amount of the sauce mixture in the bottom of a 9 x 13 baking dish. Pour pasta into baking dish and top with sauce mixture. Sprinkle the top with Parmesan cheese and lightly mix sauce, Parmesan cheese and pasta together. If it seems thick and a little dry, just pour a little more water over the top....It seems like a lot of water, but as it bakes, it will be absorbed.
- Sprinkle the top with mozzarella and bake for 15 minutes or until the cheese is melted and browning.
